Date Night

Justin and I love our date nights :) We usually do the typical dinner and a movie...we're not very creative and tonight was no different! Islands for dinner (don't worry I had the sleek greek salad..only 341 calories) and then we went to the cheap seats and saw how to train a dragon! Super cute movie. Highly recommended. Love you babe! Looking forward to many many more date nights in the future!

Valleys Biggest Loser Finale

Saturday night was our biggest loser finale! I am so sad that it is coming to a close but so grateful that I got to be a part of it! Our team ended up winning the team prize which was a month free to the gym. My beautiful friend Jennifer below ended 3rd in the whole competition out of 200! Way to go Jen!! And another lady named Joy from our team won the whole shebang! She lost a total of 85lbs!!!!

last weigh in followed by an eat fest!!!!

We had our last valley's biggest loser weigh in yesterday morning! I've lost a total of 26lbs so far with about 45 more to go...its a good start! We then decided that we would all like to celebrate and reward ourselves with a delicious day of food! We started off at Richie's Diner...Jennifer and I

After breakfast Jennifer and I went to El Torito with my family and then I rounded off the night at Red Robin with the hubby and some friends! I was in a major food coma by the end of the night!

This experience was one of the best in my life and I am sad that it is coming to a close. I am however excited to continue my journey and to see where it takes me! I have met so many wonderful people that have changed me for the better and I can't thank them enough! Can't wait for the Finale next Saturday!

5k Run through the Vineyards

I ran my first ever 5k this past Saturday morning. It was the run through the vineyards in the wine country and let me tell you it was literally a run through the vineyards! Sand, dirt, potholes, wood chips, etc. Probably not the best one to start out on but was still a blast. Being that I had really never actually run longer than a mile consecutively before I was proud of myself for running the whole thing and finishing in 35:39!Jennifer and I before the race

Delish!!

Mexican Redneck Casserole

Nutritional Info
· Fat: 11.5g
· Carbohydrates: 18.6g
· Calories: 228.6
· Protein: 13.0g
Ingredients
1/2 box. macaroni, cooked (1 box = 1 lb.)
1 lb. lean ground beef
1 package taco seasoning
2/3 c. water
1 medium onion,
diced1 green pepper,
diced3 cloves garlic, minced
1 can sweet corn
1 cup lowfat sour cream
1 package dry onion soup mix
1 can Cream of Celery soup (98% fat free)
1 can Cheddar soup
8 oz. mild cheddar cheese (lowfat), shredded
Directions
Brown ground beef. Add taco seasoning and water, and simmer for 5 minutes. Saute onion, green pepper and garlic in butter-flavored cooking spray until tender. Mix sour cream, onion soup mix, cheddar cheese, Cream of Celery and Cheese Soup in 9x13 baking dish. Stir in corn, sauted vegetables, and ground beef. Gently stir in cooked macaroni. Bake at 350 degrees for 35 minutes. Makes 12 1-cup servings.

Santa Rosa Plateau

Yesterday morning a group of us went to Santa Rosa Plateau for an 8.5 mile hike! And let me tell you it was long! After having worked out 4 hours the previous day I was already hurting a bit and after this yesterday afternoon I couldn't move! Sherri, Marissa, Me, Karen, Betsy, Jennifer
