Will, Lucy, & Lucy

Today we went to the Picture People at the mall to get Will, Big Lucy, and little Lucy's picture taken. We have a picture of Elsha (will and lucy's mom), aubree (elsha's sister), and me when we were little so its only fair that we get the three of them together! They were so cute! Maybe I can try to scan a couple of them on here later...we'll see. After the pictures were taken of course Will had to go ride the horses. Big Lucy joined in and little Lucy is still a little to small!! They are all such cute kids!!!

Mini Family Reunion...

Justin's grandparents have timeshares and this year they got one in Oceanside! We went down today to have dinner with some of the family that we don't get to see very often! It was a lot of fun! Justin's grandpa Jim had Alzheimer's so it is good for us to spend time with him. Poor guy!! The view was beautiful from the room and I wish we could have stayed longer!!

O how I love little Will!


Last night after we had gone to Northwoods Inn with Justin's parents to celebrate his birthday they dropped me off at Disneyland. My mom and Bradley went along with our friend Elsha's son Will. They live in Salt Lake but they have been family friends since I was born. He is three and is he so darn cute and funny!! I need him around all the time for entertainment!! All he wanted to do was go on Buzz Lightyear so we took him twice. He got a buzz lightyear gun and then enjoyed shooting us with it all night. I told him it wasn't very nice to shoot people when he then assured me that it was just pretend!! Haha! I just love this kid!

Justin got a little boo boo!


Yesterday at work Justin had a little accident. About one o'clock he was at an appointment in Hemet. He was picking up some trash outside the man's mobile home and when he went to stand up he sliced his head open on some of the porch roof metal. He said it just felt like he bumped his head but when he went to grab it he realized that it was bleeding quiet badly. The man in the mobile home who was mexican and who couldn't speak very good English called the operator and told them that he need 901. Justin corrected him!!! haha. He lost a pint of blood and they came and cleaned him up but didn't give him any stitches. We went to urgent care last night but it was a 3 1/2 hour wait so we went back this morning and they got us right in. The doctor said that they should have given him stitches but they were able to glue it back together. They also gave him a tetnis shot. His hair fell out around where the cut is. Hopefully it grows back!! I cant be married to baldy!! haha. just kidding. The best part was when they came in to give him the shot. He was like a little boy asking the nurse if it was going to hurt!!! So funny!! My big, tall man afraid of a little needle!!

Yet another health issue I just found out about...

I just got back some more results from the blood tests I did a week ago. It turns out that I have hyperthyroidism. Here is the gist of it...

Hyperthyroidism occurs when the thyroid gland makes too much thyroid hormone. Excess thyroid hormone can cause symptoms such as tiredness, weight loss, increased heart rate, heat intolerance, sweating, irritability, anxiety, muscle weakness, and thyroid enlargement.


Why did I not get the weight loss symptom? Can someone please explain to me why I am not that lucky!!! I do however have the tiredness, heat intolerance, sweating, irritability (Justin can tell you all about that one), anxiety, and muscle weakness!!!
Needless to say I have an appointment with my psychiatrist on wed. He was the one who wanted the blood work done in the first place to find out about my thyroid. Then I will be seeing my doctor to try to get this all regulated!!
I guess its good to know because now I know why i feel like this all the time. And it gives me an excuse to be irritable. haha. just kidding!!!

Black Bean Brownies



This might sound strange, but these brownies actually come out rich and fudgy. They are low fat, high in fiber and protein and no one would know there are beans in them. A great way to eat dessert with out packing on the pounds!


20 servings • Time: Baking time varies


1 can (15 oz.) black beans
1 box brownie mix


Open can of beans, drain and rinse well. Put beans back in the can and fill can with water. Put beans and water in blender until smooth. Mix pureed beans with brownie package mix. DO NOT add eggs or oil. Spray baking dish with Pam. Cook brownies according to package directions. Cool and serve.

Babysitting!!!

Autumn called me yesterday afternoon to see if we could watch the boys while her and tyson went to the movies. Of course I said yes! We went over to Justin's parents house to go swimming in hopes to entertain Hunter for a while. It worked :D After swimming we went to Rite Aid to get some ice cream and the man kept referring to Hunter as our son...we just played along. Hunter, Wyatt, and Justin in the Jacuzzi

Wake up call!


All those who know me should know that I am addicted to fast food and have been ever since I got my license when I was 16. I always knew it wasn't good for me but oh well it tasted good. Well yesterday I had to go get blood work done and I found out that I have high cholesterol. I always thought I might just because my diet is so bad but now I know I do. My level is a 226 and it should be 200 or lower. So today I did some research, went and picked up a heart healthy cookbook, and am on a mission to get healthy! For heavens sake I'm only 20 years old. I SHOULD NOT HAVE HIGH CHOLESTEROL AT 20 YEARS OLD!!!!!!!!!


Since I'm going to be cooking and using food to lower my cholesterol I will share my dinner recipes in hope that all of us can get healthier!

Make Ahead Cheese and Hamburger Casserole


1 pound low fat ground beef

i cup chopped onion

3 garlic cloves, crushed

6 tablespoons tomato paste

1 teaspoon sugar

1 teaspoon dried thyme

i teaspoon dried oregano

1/4 teaspoon pepper

1 (28 ounce) can whole tomatoes, undrained and chopped

1/2 cup all purpose flour

2 1/2 cups fat free milk

1 cup crumbled feta

3/4 cup shredded part skim mozzarella

4 cups uncooked penne


1. Combine first 3 ingredients in a large non-stick skillet, and cook over medium-high heat until browned, stirring to crumble. Add tomato paste and next 5 ingredients, stir well. Bring to a boil, reduce heat, and simmer, uncovered, 20 minutes. remove from heat.

2. Lightly spoon flour into a dry measuring cup, level with a knife. Place flour in medium saucepan. Gradually add milk, stirring with a whisk until blended. Place over medium heat, cook 10 minutes or until thick, stirring constantly. Stir in cheeses, cook 3 minutes or until cheese is melted, stirring constantly. Reserve 1/2 cup cheese sauce, set aside. Pour remaining cheese sauce, beef mixture, and pasta in 13x9 inch baking dish, stir gently. Drizzle reserved sauce over top. Cover and refrigerate 24 hours.

3. Preheat over to 350 degrees

4. Bake at 350 covered, for one hour and ten minutes or until thoroughly heated.


Yields 8 servings


*The penne doesn't have to be cooked beforehand because it absorbs the liquid when the dish is refrigerated overnight. If you want to make it the same day, cook the pasta before adding it to the other ingredients.
